This coffee is popping we are super happy to be featuring this expressive and clean washed ethiopian from our friends at prodigal when hot, the cup is grape forward with sweet blueberries, and a clean and floral finish. When cooled, this coffee starts to become loud. The grape acidity becomes even more structured, followed by a sweet blueberry note creating a clean acidity presentation. The finish also has lovely florals and a long honey linger making each sip delightful. This is a fantastic introduction to washed ethiopian coffees and is a great example of how good washed coffee can be please let this coffee rest for at least 2 weeks before brewing. We find prodigal's roasts to begin opening up around 3-4 weeks off roast we suggest you try both of these coffees together to compare the washed vs. Natural process. The washed version emphasizes clean and structured acidity with a clean finish while the natural showcases punchier and heavier fruits with nice rounding and a sweet finish.
