This weeks secret stash comes from my friend bryan choi who runs ondo coffee in los angeles. He has recently ventured into roasting and is roasting expressive coffees on a stronghold. This coffee comes from producer elkin guzman who has developed the unique pink champagne washed process. See details below for more info. Ive found this coffee to be surprising as the aromatics and fragrance remind me of a strawberry cofermented coffee but then tastes like an anaerobic washed coffee. If you read up on the processing the aromatics make sense, but it seems the drying process may have a big impact on the cleanliness in the cup. When the coffee is hot, it is sweetness forward and layered with red fruit acidity underneath and once cooled, a pink lemonade acidity becomes structured with high sweetness. I opted for a coarser and faster brew time for this coffee to bring out the vibrant pink lemonade notes and to get the vanilla note in the finish.
