This week is a syrup bomb of a chiroso coming from aviary out of cleveland, ohio its been a while since weve featured an expressive washed coffee that has structured acidity and sweetness. I pick up on a really nice citrus acidity with a structured maple syrup that lingers throughout. The level of expressiveness in this coffee is turned up to eleven and i would recommend you taste this coffee when cooled down. Did i also mention this coffee is clean aviary has a transparent roasting style so i suggest you save some of this coffee and enjoy it across the coming weeks my recipe for this coffee is my 1:17 higher extraction recipe but i would recommend you experiment with pushing grind even finer.
